Tomato + Cucumber + Basil + Balsamic Vinegar + Pepper + (a light drizzle of) Olive Oil
This summer salad is a 10/10 for taste and simplicity. Chop the cucumbers and tomatoes into slices, dices, or however you like cucumber and tomato chopped. Cut a few basil leaves and stir them in. My favorite way to cut basil leaves is to lay a few leaves flat on top of each other, and then roll them all up together and cut that into pieces. When you unroll the leaves, you are left with perfect little basil ribbons. Finish with a light drizzle (think a teaspoon or two) and some fresh ground pepper. Dishes like this make it simple to make half of your plate veggies!
